Thai Veggie Stir Fry

This Thai Veggie Stir Fry can be whipped up in no time and is a great addition to your weekly menu. Made using our Thai Green Curry Meal Sauce, it's packed full of flavour and you can customise this recipe to include any vegetables and protein your heart desires.

Ingredients
- 1/2 cup Broccoli
- 1/2 cup Cauliflower
- 1 large Red capsicum
- 1 large Carrot
- 1 large Courgette
- 2 Spring onion
- 1 Brown onion
- 1 piece Fresh ginger, peeled
- 1 Tbsp Peanut oil
- 365 g Barker's Thai Green Curry Meal Sauce
- 1 Tbsp Soy sauce
- 1/2 cup Roasted, salted cashews
- to serve Cooked long grain rice
- to garnish Sesame seeds
Method
- Cut broccoli and cauliflower into small florets. Dice capsicum into chunky pieces, slice carrot into matchsticks and cut courgette into larger sticks. Thinly slice spring onions. Cut brown onion into chunky wedges. Slice ginger into thin matchsticks.
- Heat oil in a large wok on high. Stir fry veggies (excluding spring onions) until just tender, about 5-7 minutes.
- Reduce heat to medium and stir in Barker’s Thai Green Curry Meal Sauce, soy sauce and cashews. Simmer for a couple of minutes.
- Serve on rice and garnish with spring onions and sesame seeds, if using.
Tips
- This stir fry is easily customised - just switch out the vegetables according to your preferences.
- For extra protein, add tofu, prawns or chicken.
- Serve with wedges of fresh lime, if you have some on hand.
