No Bake Berry Slice

Because everyone loves a healthy no-bake slice. Made using our Mixed Berry Smoothie Base, this slice is perfect for keeping in the freezer as a quick snack.

Ingredients
Base
- 1 cup Pitted medijool dates
- 1 cup Raw almonds
- 1/3 cup Shredded coconut
- 3 Tbsp Coconut oil
- 1 Tbsp Cocao powder
Middle
- 3/4 cup, soaked Raw cashews
- 1/4 cup Shredded coconut
- 1/4 cup Coconut cream
- 1/4 cup Maple syrup
- 1 tsp Vanilla extract
Top
- 3/4 cup, soaked Raw cashews
- 1/2 cup Coconut cream
- 100 ml Barker's Mixed Berry Smoothie Base
- 1 Tbsp Maple syrup
- 100g, fresh or frozen Blueberries
- 1/4 cup Shredded coconut
Method
- Make sure you have soaked the cashews for the middle and top layers (see tips below). Line a small slice pan with baking paper.
Base
- Place all ingredients in a food processor and process to a chunky paste (mixture should stick together well when pressed against the sides of the food processor). Tip into the slice pan and press down into an even layer. Place in the freezer while you prepare the middle layer.
Middle
- Clean food processor. Add all ingredients for middle layer and blend until smooth (this will take a few minutes). Pour on top of base, spread out evenly and return to freezer for 15 minutes
Top
- Add cashews, coconut cream, Barker’s Mixed Berry Smoothie Base and maple
- Freeze for at least 4 hours before slicing and serving. Store any leftovers in an airtight container in the freezer.
Tips
- This is a great treat to have on hand in the freezer. Simply remove from the freezer and allow to thaw for a couple of minutes before serving.
- The cashews in this recipe need to be soaked in order to achieve a smooth texture. To do this, you can either place in a bowl, cover cashews with cold tap water and leave in the fridge for 8 hours or overnight or place in a bowl, cover cashews with boiling water and leave to sit for 1 hour. Drain well and rinse before using.
