Vegetarian Nachos

This easy, crowd-pleasing Vegetarian Nachos is perfect for sharing and packed with wholesome veggies and savoury, tomatoey goodness.

Ingredients
- 1 Brown onion, diced
- 1 Large capsicum, diced
- 400 g Mushrooms, roughly chopped
- 400 g Chilli Beans
- 500 g Barker's Tomato Nachos Meal Sauce
Method
- Heat a little oil in a large pan over medium-high. Add onion and capsicum and cook until just soft.
- Add mushrooms and cook until tender (about 5 minutes). Stir in chilli beans and Barker’s Tomato Nachos Meal Sauce. Simmer for 5 minutes. Meanwhile, preheat oven to grill.
- Season nacho mixture with salt and pepper to taste. Arrange corn chips on a large oven tray. Top with nacho mixture and sprinkle with cheese. Grill for a couple of minutes, or until cheese is melted and bubbling.
- Top with guacamole, sour cream and coriander, and serve with wedges of lime.
Notes
- This recipe works well with other veggies too - it’s a great way to use up anything you have languishing in your veggie drawer!
- Choose mild chilli beans for a family-friendly option, or up the spice with hot chilli beans. You can also use plain black beans or kidney beans (rinsed and drained).
