Vegetarian Nachos

This easy, crowd-pleasing Vegetarian Nachos is perfect for sharing and packed with wholesome veggies and savoury, tomatoey goodness.

Ingredients

Method

  1. Heat a little oil in a large pan over medium-high. Add onion and capsicum and cook until just soft.
  2. Add mushrooms and cook until tender (about 5 minutes). Stir in chilli beans and Barker’s Tomato Nachos Meal Sauce. Simmer for 5 minutes. Meanwhile, preheat oven to grill.
  3. Season nacho mixture with salt and pepper to taste. Arrange corn chips on a large oven tray. Top with nacho mixture and sprinkle with cheese. Grill for a couple of minutes, or until cheese is melted and bubbling.
  4. Top with guacamole, sour cream and coriander, and serve with wedges of lime.

Notes

  1. This recipe works well with other veggies too - it’s a great way to use up anything you have languishing in your veggie drawer!
  2. Choose mild chilli beans for a family-friendly option, or up the spice with hot chilli beans. You can also use plain black beans or kidney beans (rinsed and drained).
