Ingredients
- 1 tsp Olive oil
- 600 g Prime beef mince
- 1 cube Beef stock
- 1 jar Barker's Tomato Nachos Meal Sauce
To serve
- 2 Tomato
- 1/2 Red onion
- 1 bunch Fresh coriander
- 1 Avocado
- 1-2 cut into wedges Lime
- Tostitos Mild Mexican Salsa Corn Chips
- Alpine Tasty Grated Cheese
- Meadow Fresh Traditional Sour Cream
Method
- Heat oil in a large pot on medium-high. Cook mince, breaking up into small pieces, until browned all over.
- Crumble in stock cube and stir to combine. Pour in Barker’s Tomato Nachos Meal Sauce and simmer for 10 minutes, until sauce has reduced to your preferred consistency.
- While mince simmers, prepare serving ingredients. Make a simple salsa by finely dicing tomatoes, onion and a small handful of coriander. Place in a bowl and stir to combine.
- In a separate bowl, mash avocado. Add a squeeze of lime and salt and pepper to taste.
- Arrange Tostitos Corn Chips in a large serving dish. Spoon mince mixture over the top and add a generous sprinkle of Alpine Tasty Grated Cheese. Grill to melt cheese, if desired.
- Top nachos with Meadow Fresh Sour Cream, tomato salsa and avocado. Garnish with coriander and lime wedges. Serve immediately.
