No-Bake Lemon Curd Slice

  1. Soak the dates in boiled water for 10 minutes.
  2. Blitz the almonds in a food processor until a chunky mixture forms.
  3. Add the rest of the base ingredients and blend until a mixture forms.
  4. Press into a lined baking tray (20cm by 20cm).
  5. Spread the lemon curd evenly over the top.
  6. Melt the dark chocolate in the microwave using 30 second intervals and drizzle over the top of the slice.
  7. Freeze for 4 hours or overnight.
