Easy Spinach & Ricotta Lasagne

The name says it all, try our delicious Spinach & Ricotta Lasagne. Made with our new Classic Savoury Cottage Pie Meal Sauce, this lasagne is easy to prepare and even easier to cook! A perfect meal for when you're short on time.

Ingredients
- Cooking oil spray
- 250 g Ricotta
- 150 g Crème fraîche
- 1 Egg
- 3 crushed Large clove garlic
- 500 g Barker's Classic Savoury Cottage Pie Meal Sauce
- 6 Instant lasagne sheet
- 120 g Baby spinach
- 2 cups, grated (Colby or cheddar) Cheese
Method
- Preheat oven to 180ºC fan bake and lightly spray a deep oven-safe dish (approximately 20cm x 25cm) with cooking oil spray
- Place ricotta, crème fraîche, egg and garlic in a medium jug/bowl and season with salt and pepper. Whisk with a fork until well combined.
- Spread prepared dish with a little of the Barker’s Cottage Pie Meal Sauce. Top with one third of the lasagne sheets (breaking them as needed to fit). Spread one third of the remaining Barker’s Cottage Pie Meal Sauce on top. Add one third of the spinach, then spoon one third of the ricotta mixture over the top, followed by a third of the cheese.
- Repeat (starting with lasagne sheets) to form two more layers. Bake for 35 minutes, until lasagne is golden, bubbling and cooked through.
- Remove lasagne from oven and leave to rest for 5-10 minutes before slicing and serving.
Tips
- Serve the lasagne with a side salad or roasted broccoli. Garlic bread is a nice accompaniment too!
