Coffee Rubbed Pork Ribs

Pork ribs are a family BBQ favourite, and this recipe with a coffee and spice rub and our Barker’s Tomato BBQ Rib Meal Sauce is sure to please!

Ingredients

  • 2 Tbsp Espresso grind coffee
  • 2 tsp Cumin, ground
  • 2 tsp Smoked paprika
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 2 Tbsp Brown sugar
  • 4 Tbsp Dijon mustard
  • racks Baby back pork ribs
  • 1 jar Barker’s Tomato BBQ Rib Meal Sauce

Method

  1. Combine the coffee, cumin, smoked paprika, onion, garlic, and brown sugar and set aside.
  2. Brush the Dijon mustard over the pork ribs and then sprinkle the rub generously over both sides of the pork. Put on a rack that will fit into a lipped baking tray. Refrigerate for 2 hours to marinate (or leave overnight).
  3. Preheat the oven to 160°C. Put 250mls water in the baking tray. Sprinkle the pork with salt, cover with foil and bake for 1½ hours or until the meat offers no resistance when pierced with a knife.
  4. Pour ½ the jar of Barker’s Tomato BBQ Rib Meal Sauce into a bowl and loosen with a little water. Brush over the pork and either bake in a 200°C oven for 15 to minutes to heat through or put onto the BBQ to finish cooking, watching that the glaze doesn’t burn.
