Tahitian Raw Fish

Zesty and fresh this raw fish salad is full of flavour.

Ingredients

Method

  1. Rinse skinned and deboned fresh fish in iced salted water for a few minutes and then pat dry. Cut into 2cm chunks and place in a bowl.
  2. Squeeze lemon juice over fish and leave to sit in the fridge for a few minutes to cure.
  3. Deseed and peel cucumber, peel and slice cherry tomatoes into quarters, finely slice spring onion before adding to the bowl.
  4. Add cucumber, tomatoes, spring onions, coconut milk and Barker's Coconut & NZ Lime Dressing to the bowl.
  5. Season to taste and stir well to combine. Chill completely before serving.
