There’s nothing like homemade seeded crackers to enjoy on a platter with your favourite Barker’s Fruit for Cheese. Best of all, these ones are gluten free!

Ingredients

  • 1/4 cup Chia seeds
  • 1/2 cup Pumpkin seeds
  • 1/4 cup Flax seeds
  • 1/4 cup Sesame seeds
  • 1/2 cup Sunflower seeds
  • 2 tsp Nutritional yeast (optional)
  • 1 tsp Sea salt
  • 2 Tbsp Extra virgin olive oil
  • 1 cup Water

Method

  1. Put all the ingredients in a food processor and blend to a coarse mix. Leave to sit for 30 minutes to allow the chia and flaxseeds to thicken the mix.
  2. Preheat the oven to 160°C. Put half the mix between 2 pieces of baking paper and use a rolling pin to roll out the mix to 3 - 4mm thick. Remove the top piece of baking paper and sprinkle the dough with extra sea salt and put onto a baking tray.
  3. Lightly score the dough with a knife if you would like even cut pieces, otherwise leave as is. Bake for 20-25 minutes until golden. Cool before breaking into shards if you left dough whole. Store in an airtight container.
  4. Serve on a cheese platter with your favourite Barker’s Fruit for Cheese or Relish.
