Thai Red Chicken Curry

This winter, whip up this cozy, flavour-packed dish using Barker's NEW Thai Red Curry Meal Sauce- because delicious doesn’t have to mean complicated.

Ingredients

  • 600 g Boneless, skinless chicken thighs (diced and seasoned)
  • 1 Onion, thinly sliced
  • 1 Capsicum, thinly sliced
  • Green beans, halved
  • 500 g Barker's Thai Red Curry Meal Sauce
  • Jasmine rice, to serve
  • Coriander or Thai basil, to garnish

Method

  1. Brown chicken in a wok with a little oil.
  2. Add onion, capsicum and beans. Stir fry for 2 minutes.
  3. Add meal sauce and simmer for 10 minutes, until chicken is cooked. Season to taste.
  4. Serve on rice. Garnish with herbs.
