There’s nothing like homemade seeded crackers to enjoy on a platter with your favourite Barker’s Fruit for Cheese. Best of all, these ones are gluten free!

Ingredients
- 1/4 cup Chia seeds
- 1/2 cup Pumpkin seeds
- 1/4 cup Flax seeds
- 1/4 cup Sesame seeds
- 1/2 cup Sunflower seeds
- 2 tsp Nutritional yeast (optional)
- 1 tsp Sea salt
- 2 Tbsp Extra virgin olive oil
- 1 cup Water
Method
- Put all the ingredients in a food processor and blend to a coarse mix. Leave to sit for 30 minutes to allow the chia and flaxseeds to thicken the mix.
- Preheat the oven to 160°C. Put half the mix between 2 pieces of baking paper and use a rolling pin to roll out the mix to 3 - 4mm thick. Remove the top piece of baking paper and sprinkle the dough with extra sea salt and put onto a baking tray.
- Lightly score the dough with a knife if you would like even cut pieces, otherwise leave as is. Bake for 20-25 minutes until golden. Cool before breaking into shards if you left dough whole. Store in an airtight container.
- Serve on a cheese platter with your favourite Barker’s Fruit for Cheese or Relish.
