Haloumi & Asparagus Skewers

A great bbq option for vegetarians - suitable for lunch or dinner.

Ingredients
- 2 bunches Asparagus
- 2 blocks Haloumi cheese
- 1 Tbsp Olive oil
- to garnish Herbs
- Mushroom
- Bacon
- Skewers
- 1/2 cup Barker’s Coconut & NZ Lime Dressing
Method
- To prepare asparagus, remove woody ends then cut stems into thirds.
- Cut Haloumi, into 1-2cm thick slices.
- Thread 2 pieces of asparagus and 1 piece of Haloumi onto a soaked kebab stick or skewer, then repeat once more.
- If using bacon or mushroom add 1-2 pieces per skewer, reducing Haloumi & asparagus.
- Drizzle with olive oil and season.
- Grill on a hot BBQ for 3-4 minutes each side, then place on a platter.
- Drizzle with Barker's Coconut & Lime Dressing, then garnish with fresh herbs if desired. Serve immediately.
- Add mushrooms and/or bacon to create a meaty flavour.
