A great bbq option for vegetarians - suitable for lunch or dinner.

Ingredients

Method

  1. To prepare asparagus, remove woody ends then cut stems into thirds.
  2. Cut Haloumi, into 1-2cm thick slices.
  3. Thread 2 pieces of asparagus and 1 piece of Haloumi onto a soaked kebab stick or skewer, then repeat once more.
  4. If using bacon or mushroom add 1-2 pieces per skewer, reducing Haloumi & asparagus.
  5. Drizzle with olive oil and season.
  6. Grill on a hot BBQ for 3-4 minutes each side, then place on a platter.
  7. Drizzle with Barker's Coconut & Lime Dressing, then garnish with fresh herbs if desired. Serve immediately.
  8. Add mushrooms and/or bacon to create a meaty flavour.
