Ingredients
- 200 g Beef scotch fillet, sirloin or rump steaks
- Barker’s Smokey BBQ Marinade
- 1 Onion
- 2 cloves Garlic
- 1, 1/2 Tbsp Butter
- 1 Tbsp Olive oil
- 1/4 cup Mayonnaise
- 2 Tbsp Horseradish cream
- 2 Turkish or ciabatta rolls
- 4 slices Swiss or cheddar cheese
- 1 Tomato, sliced
- 2 cups Baby rocket or lettuce
Method
- Season steak with salt and pepper and slather generously with Barker’s Smokey BBQ Marinade. Cover and refrigerate for at least 30 minutes.
- Thinly slice onion and crush garlic. Melt butter in a small frying pan on medium-low heat. Add onion and garlic and cook, stirring occasionally, until golden, tender and caramelised. Stir through 2 tablespoons of Barker’s Smokey BBQ Marinade and season with salt and pepper to taste. Reduce heat to very low to keep warm.
- Heat a separate frying pan (or barbecue) on medium-high. Cook steak for 4 minutes each side (for medium-rare), or until cooked to your liking. Baste frequently with extra marinade. Remove from pan, cover loosely with foil and leave to rest for 5 minutes before thinly slicing.
- Mix mayonnaise and horseradish together. Place cheese on rolls and toast/grill. Spread with horseradish mayo and fill with steak, onions, tomato and lettuce. Serve immediately.
