Nacho Bowls

This flavourful and fun meal is sure to please the whole family, on the dinner table in just 30 minutes.

Ingredients

To serve

  • 1/4 Red cabbage, shredded
  • 200 g Cherry tomatoes, quartered
  • 1/2 can Corn kernels, well drained
  • 1/2 Small red onion, diced
  • 2 handfuls Fresh coriander, roughly chopped
  • Juice of 1/2 lime
  • 1 Tbsp Olive oil
  • 200 g Sour cream
  • 4 tsp Barker's Really Useful Chipotle Sauce
  • 250 g Corn chips
  • 1 cup Grated cheese
  • 1 Avocado, diced
  • Lime wedges

Method

  1. Heat oil in a large saucepan on medium-high. Add mince and cook, breaking up with a wooden spoon, until browned all over.
  2. Crumble in stock cube and cook for 1 minute. Stir in Barker’s Tomato Nachos Meal Sauce and chilli beans. Simmer for 5-10 minutes, stirring occasionally. Season with salt and pepper to taste.
  3. While nacho mixture is simmering, prepare serving ingredients. Place cabbage, tomatoes, corn, onion and coriander in a large bowl. Drizzle with lime juice and olive oil and season with salt and pepper. Toss to combine.
  4. Place sour cream and smaller quantity of Barker’s Chipotle Sauce in a small bowl. Stir until well combined. Taste and add more chipotle sauce if desired.
  5. Layer up nacho bowls with corn chips, mince mixture, cheese and cabbage salsa. Top with avocado and dollop with chipotle sour cream. Serve with lime wedges.
