Heirloom Tomato and Bocconcini Salad

A mix of brightly coloured tomatoes, combined with bocconcini or mozzarella and our Herb & Caper Vinaigarette makes for an easy and rewarding summer salad.

Ingredients
- 900 g Tomato
- 1 tub Bocconcini
- 3 Tbsp Barker's Herb & Caper Vinaigrette
- 1 Tbsp Capers
- handful, green or purple Basil leaves
Method
- Cut the tomatoes into slices and arrange on a serving dish. Slice the bocconcini and arrange on top of the tomatoes. Season with salt and pepper.
- Drizzle the Barker’s Herb & Caper Vinaigrette over the tomatoes and bocconcini.
- Scatter over the basil and capers and serve.
